Tex-Mex Chicken Soup

Chicken tortilla soup is a restaurant favorite, but you can easily make your own version at home in about 30 minutes.

    2 tbsp. olive oil
    1 large onion
    kosher salt
    3 clove garlic
    1 jalape?os
    2 tsp. ancho chile powder
    2 can diced fire-roasted tomatoes
    1 container low-sodium chicken broth
    Diced avocado
    Shredded chicken
    Sweet corn
    black beans
    tortilla chips
    sour cream
    Grated Cheddar
    Lime wedges


    Heat the oil in a large Dutch oven or pot over medium heat. Add the onion and 1/2 teaspoon kosher salt and cook, covered, stirring occasionally, until the onion is very tender and beginning to brown around the edges, 10 to 12 minutes. Add the garlic and jalape?o and cook, stirring, for 1 minute.
    Add the chile powder and cook, stirring, for 1 minute. Add the tomatoes (and their juices) and chicken broth and bring to a boil. Reduce the heat and simmer for 15 minutes.
    Using an immersion blender (or a standard blender, working in batches), purée the soup. Ladle into bowls and serve with toppings.

Skillet Chicken Piccata

This one-pan lemony chicken is a total winner MPLS VPN.

    1 tbsp. extra-virgin olive oil
    4 bone-in skin-on chicken thighs
    kosher salt
    Freshly ground black pepper
    3 cloves garlic, minced
    2 tbsp. butter
    1/4 c. dry white wine
    Juice of 1 lemon
    2 tbsp. capers
    1 lemon, sliced
    Chopped fresh parsley, for garnish


    In a large skillet over medium-high heat, heat oil. Season chicken with salt and pepper and cook chicken thighs until golden and no longer pink sense herakles plus, 8 minutes per side. Transfer chicken thighs to a plate. Discard half the chicken juices from skillet and reduce heat to low.
    To skillet, add garlic, butter, white wine, lemon juice, and capers and bring to a simmer. Add lemon slices and return chicken thighs to skillet. Let chicken simmer in sauce for 5 minutes, then garnish with parsley and serve HealthCabin shipping time.

Key Lime Pie Fudge

This tart fudge requires a little bit of oven work, but the delicate, buttery graham cracker crust makes it totally worthwhile kangertech subtank mini.

    1 c. graham crackers, crushed
    2 tbsp. butter, melted
    1 14 oz. can sweetened condensed milk
    2 1/2 c. white chocolate chips
    3 tbsp. lime juice
    Zest of 1 lime


    Preheat the oven to 350°F.
    Combine graham cracker pieces and butter in a small bowl Disaster Recovery Solution. Pour onto a foil-lined 8”x8” baking dish (the foil will make it easier to pull out later). Bake for 5-6 minutes.
    In a medium-sized microwave-safe bowl, combine sweetened condensed milk and white chocolate chips. Microwave in 1-minute intervals, stirring in between, until fully melted. Stir in the lime juice and lime zest until fully combined. It may take a minute or so of stirring to do so.
    Pour mixture on top of the graham cracker crust. Refrigerate for at least 4 hours, or until set. Cut into 1” bars and serve you beauty.
